Cinnamon Chaffle Layered with Spiced Chocolate Latte Mousse

A waffle maker seemed to be on my must-have list since I kept seeing delicious looking chaffle pictures on the Internet. Yep, those yummy looking food pictures get me every time.

For my first try, I made a cinnamon swirl chaffle with Stevia-sweetened maple syrup. Delicious! That was yesterday. Today, I had just finished making spiced chocolate latte mousse for desert to be enjoyed later. Then it hit me (slap on the forehead). Would that be good as a layer in between the cinnamon chaffles? And topped with whipped cream? YES it was good! Oh Honey! It was gooood.

Sweet Cinnamon Chaffle

Recipe note: My waffle maker is a small single so you may have to double the ingredients to fill a larger maker.

INGREDIENTS
1/2 cup mozzarella cheese, shredded
1 tbs almond flour
1 tsp cinnamon
1/4 tsp baking powder
2 tsp granulated Swerve or sweetener of your choice
1 egg

DIRECTIONS
1. Add the shredded mozzarella cheese to a medium bowl
2. Add all of the dry ingredients to a small bowl and use a fork or whisk to fully combine.
3. Add the dry ingredients to the cheese and mix well.
4. Crack an egg into the cheese mixture and use the fork to stir to combine.
5. Pour into the waffle maker and follow manufacturer’s instructions to cook. My iron takes about three minutes for the steam to stop and the chaffle to be ready to eat.

I’m making a faked apple pie filling tomorrow so I will be using that to top my next cinnamon chaffle. YES! BTW, the faked apple filling is Keto friendly since you use chayote squash as the apple stand-in. I like to eat it with just a little whipped cream on top. It’s great served warm or cold. Back to the waffle maker- the only downside is that the cinnamon and sweetener seem to make an even bigger mess than just the regular bread mixture. It kind of crystallizes onto the plates so yeah- not great. How the heck are you supposed to get those plates clean since you cannot take the maker apart to wash? They say to use a damp cloth, but….have they SEEN all those little nooks and crannys?! Yikes. So, if anyone out there has a good solution for cleaning the maker, please, please, please let me know.

      I’m having fun with my maker and with the alternative sweeteners, all of the goodies are pretty guilt free. Yay!
      But yeah, the cleaning. I don’t understand why they don’t make the plates removable, but that will probably be in the new, improved, way more expensive version. Do you ever get the idea that manufacturers do that on purpose?
