Keto Cauliflower-Sausage Stuffing

Savory Keto friendly stuffing for fall

Here’s the thing- I’m already trying out dishes for a Thanksgiving menu that will be Keto friendly. I’m getting prepared because I don’t eat the traditional TG dishes anymore. Mashed potatoes, sweet potatoes with brown sugar and lots of little marshmallows, corn, bread rolls, sugary, sweet deserts!? Nope!

Well, dear friends, if you are living the Keto way, try this stuffing. I want to shout, “The best Keto stuffing EVER!” However I will refrain. Even I know that it would be a pretty broad claim. But, oh boy, this recipe is so good that you can make it as a side dish or eat it as a complete meal along with a little salad. Not only does it taste good, but in real life, it’s pretty too. In my book, that means that it will be a crowd pleaser.

This recipe is made only from ingredients that I already had on hand, either in my pantry, fridge or freezer. To customize your recipe, think about adding sliced celery, a few small chunks of carrots (for color), fresh herbs and maybe substitute cooked and cubed chicken or turkey for the sausage. Keto Cauliflower - Sausage stuffing

Note: If you are vegetarian, just leave off the sausage, add a little more spice and try using all natural, Liquid Smoke. Be careful though – a little of that stuff goes a long way.


– 4 tbsp butter or Ghee
– 1 onion, diced
– 1 small head of cauliflower chopped
– 1/4 cup fresh, chopped parsley (if you use dried, go with 2 tbsp)
– 1 tsp ground rosemary
– 1 tsp ground sage
– 1 onion, diced
– 1 small head of cauliflower chopped
– 1 packet of frozen breakfast sausages (Optional)
– 3/4 cup vegetable or chicken stock
– 1/2 cup chopped walnuts
– about 1/3 cup roasted/salted pepitas
*** You can also cut up and add little chunks of Keto bread (also optional- The link for the bread sticks is listed at the end of this recipe)


  1. Microwave cauliflower pieces in a covered glass dish with 1/4 cup water for about 6 minutes or just until fork soft. Set aside to drain off excess water.
  2. In a large skillet, cook sausage as per package directions and set aside to cool.
  3. In the same skillet, melt butter or Ghee. Saute onion (and celery if you have any) just until softened and onions start to look translucent. Add cooked cauliflower chunks and continue to saute to get a crisp roasted look to the cauliflower.
  4. While onions and cauliflower are browning, cut sausage into bite sized pieces. Do the same with the bread sticks if you are using any.
  5. To the cooked onion/cauliflower mix, add sausage pieces, bread and all of the rest of the ingredients.
  6. Stir and cook until the liquid is absorbed. This will only take about 10 minutes.
  7. salt and pepper to taste

Get that roasted cauliflower look by frying in the same skillet that you fried the sausage in.
