Keto Krazy Zucchini “Pizza”

It’s lunch time and I have very little groceries in the house. My car has been in the shop all week so the pantry is paltry and the refrigerator is fairing little better. Taking stock, I see that there is one kind of sad, small zucchini. Better cook that today or else. I also have a bit of marinara sauce that I need to use before it goes bad. Let’s see…no mozzarella, but I do have a small block of Havarti cheese. The meat drawer yields a couple slices of deli sandwich ham. Throw in a couple cherry tomatoes, some diced black olives and I say that will make a great zucchini pizza! OK, pizza with no crust, but still…

Can I just brag and tell you that this turned out delicious? I have been on this diet for about a month now. That means that I have eaten a LOT of mozzarella cheese! Well, I’m glad that I was out of it today because the Havarti was so good and creamy. It does not have the chewiness of mozzarella which suits me fine.

On a side note, it is surprisingly hard for me to include the grams of fat that is required for this Keto diet. I added butter to the recipe to get my daily ration of fat into my diet, but you do not need to add it if you are not on a high fat diet. I used to get plenty of fat, but without ice cream and chocolate candies and no corn tortillas to wrap my Mexican dinner in…and well, no refried beans either, getting a bunch of fat is harder than one may think.

To speed up the cooking,( I was HUNGRY!) I used a microwave to cook the pizza. An oven would be just fine, but it is summer right now so oven usage is kept to a minimum in our house.

Keto Krazy Zucchini Pizza

INGREDIENTS

  • OPTIONAL: 1 pat butter
  • 1 small zucchini, sliced in half lengthwise
  • 2 tbsp marinara sauce
  • 1 sandwich slice Havarti cheese cut in half
  • 1 pan fried ham slice, cut into strips
  • 2 black olives, diced
  • 2 cherry tomatoes sliced

Place the zucchini slices on a plate and microwave for 1 minute. Remove from microwave and place zucchini on a paper towel to let it sweat the moisture out while you cut and dice your other ingredients.

OPTIONAL: When most of the moisture is out of the zucchini, slather the butter across the slices.

Also optional: Threw a bit of butter and the ham into a frying pan on high heat to crisp it up. That smell and taste of caramelized ham is soooo mouthwatering. Cut the ham into strips that will fit on your little pizzas.

Top zucchini slices with a bit of marina sauce, some of the ham, cheese, more ham strips, tomatoes and diced black olives.

Microwave for one minute more or until the cheese is all gooey and melted.
